The grapes are harvested by hand after careful selection of the bunches best suited for the drying process. Once placed on racks, they are left to rest in the drying room for at least three months. During this period, they lose, on average, approximately 40% of their weight. Pressing takes place in early February, after destemming the grapes. Fermentation temperatures range between 12°C and 23°C. Slow maceration lasts 30 days, 12 of which are carried out at low temperatures. The grapes are foot-trodden three times a day, followed by malolactic fermentation.
