The quality of the grapes remained intact because, even with this severe drought, there was no scorching heatwave. The berries remained in excellent condition. All our vineyards are organically farmed, certified for our red grape varieties since 2019 and in transition for our white grapes. We work without S502 and only adjust our wines at the last minute with minimal doses.
Cold pre-fermentation for 4-5 days at 6°C with sustained extraction, punch-downs, and pump-overs before alcoholic fermentation. Alcoholic fermentation in concrete tanks.
