Ideal for cheese boards, especially with cheeses like brie or camembert. Charcuterie, tuna with berry sauce, mushroom risotto, and paella. Chocolate and cherry cake with berries.
Aging: 30% of the blend (presses) in 2nd and 3rd wine barrels for 3 months
Hand-harvested in 12 kg trays, separated by plot. Double selection of the grapes and berries upon arrival at the winery to remove impurities. Cooling in a cold room and cold-pressed. Fermentation in cement and stainless steel tanks. Skin maceration for 15 days during alcoholic fermentation with native yeasts. During malolactic fermentation, frequent lees stirring for 2 to 3 months, followed by 3 months of aging in second- and third-use oak barrels.
