Vineyards belonging to the property, located on the eastern slopes of the hills of Alice Bel Calle, in the Alto Monferrato, at an average altitude of 350 meters; the vines (4,500 plants/ha, with a yield of 35 hl of wine per hectare), are trained by the traditional Guyot system in soils formed by sedimentary marl.
After crushing and destemming the bunches, hand-picked at the end of August, the grapes are left to macerate in the skin for approximately 48 hours (8ºC); after racking and cold settling of the must, fermentation is started in closed pressure tanks at a temperature of 14-16ºC; the fermentation process is stopped by cooling as soon as the desired alcoholic level has been reached, leaving a pleasant natural sugar residue in the new wine.
