Hand-reared in the early morning to maximize aroma concentration.
The grapes are hand-harvested and transported to the winery in 450kg plastic bins. The bins are unloaded directly onto conveyor belts, where the bunches are sorted before being carefully destemmed and lightly crushed. They are then transferred to the fermentation tanks.
