These grapes are microvinified in barrels without destemming the bunches. That is, the entire bunch is placed inside the oak barrel for what is known as carbonic maceration. This is a fermentation within the grapes thanks to an enzymatic process, allowing for a wine with intense aromas and a very delicate palate. After fermentation, the wine is transferred to first-use Burgundy barrels. These are barrels specially created for this variety, as they have a very special toasting. The wine remains there for approximately one year.
