Selected plots in the hills of Monteforte d'Alpone (300 meters above sea level), in the heart of the Classico zone, facing southwest. The soil is of volcanic origin and basalt-based, rich in calcium, potassium, and magnesium, on steep slopes divided into small terraces with dry stone walls. The vineyards are trained using the typical Veronese Pergoletta system (3,000 vines per hectare), with a yield of only 100 quintals of grapes per hectare.
The ripe grapes are harvested in early October and gently pressed with a long cold maceration on the skins in the press. After natural clarification of the must, it ferments at a controlled temperature (14-17°C) with selected yeasts in stainless steel tanks. There is no malolactic fermentation afterward. Cold contact with its lees until spring and the addition of a small percentage of wine made from the same grapes after they have been dried enhance the aromatic complexity and fullness of this great wine.
