The vineyard is situated on rocky, sandy soil formed from the erosion of the underlying mica schist. The stream and lake create an exceptional microclimate for vine growth. The cold, dry winters and hot summers ensure excellent ripening.
During vinification, precise temperature control allows for the extraction of a rosé color. Whether by saignée or direct pressing (depending on the variety and vintage), the grapes undergo maceration and static settling. Flavor extraction is achieved through cold stabilization. The stainless steel tanks are equipped with highly specific temperature control, essential for producing a high-quality rosé.
Pale salmon color, and that is obtained through vinification by leaving the skins to rest with the must for a few hours to achieve the color and then the skins are separated from the must.
