We seek balanced ripeness in the grapes, which are machine-harvested during the cool morning hours. The grapes are transferred directly to a pneumatic press that ensures gentle pressure on the skins to extract the pale pink color typical of Provençal wines. The clear must is then transferred to a stainless steel tank, and cold fermentation begins to fully realize the grapes' potential and preserve their fruity and floral aromas. After fermentation, the wines are blended and aged on their lees in stainless steel tanks to enhance the structure on the palate and provide a sweet and savory finish.
