Part of the vineyards are planted on clay-limestone hills where some slopes can be as steep as 40%. The other part is planted on limestone plateaus called "caillottes".
The grapes are harvested when fully ripe and pressed immediately. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Before bottling, the wine is clarified in a cold room for 5 or 6 days.
