In 1997, Jacques and François discovered several plots of old, ungrafted Chardonnay and Cabernet Sauvignon vines near the village of Santa Cruz in the Colchagua Valley. With grapes of exceptional concentration, these vines naturally became the foundation of Gran Araucano Chardonnay and Cabernet Sauvignon. Today, we have complemented them with vines located near the village of Lolol and in the town of Apalta.
Cold pre-fermentation maceration for five days followed by alcoholic fermentation with periodic punch-downs and pump-overs. Post-fermentation maceration for 15 days to obtain an elegant tannic structure. Malolactic fermentation in tanks for a relatively short period of 8 to 10 days.
