Separate vinification of each grape variety and even different vineyard blocks, followed by a blend of these distinct components after aging. A delicate harvest with careful selection of bunches and berries. Pre-fermentation maceration (between 5-8°C) in concrete and stainless steel tanks for 4 days with punch-downs. Fermentation at temperatures of 24-26°C with regular pump-overs. Extraction is concentrated during the pre-fermentation period and the first third of fermentation. Malolactic fermentation in the tank and aging diversified according to the grape variety.
