Sciù es un vino elegante y estructurado, con taninos potentes pero fresco al mismo tiempo. Su nombre hace referencia al yugo del arado en el dialecto leccese, evocando el arduo trabajo de la tierra, al igual que el nombre de sus uvas (Susumaniello) recuerda al incansable trabajador del campo, el "burro".
The harvest is carried out mechanically in the second half of September, during the early morning hours. After pressing the grapes, red winemaking follows, with a prolonged but non-invasive maceration at a controlled temperature for approximately 15 days.
