The bunches, hand-picked and carefully selected from mid-September onwards, are made using the red wine method in vertical vinification with 10 days of controlled maceration with frequent pumping of the must over the lid and daily délestage from the third day to the sixth day;
Alcoholic fermentation takes place at 28°C and malolactic fermentation takes place immediately afterwards in temperature-controlled stainless steel tanks; the wine was aged for 12 months in medium-toasted French oak barrels; followed by blending in stainless steel where the wine rested until bottling and a long period of bottle aging.
