Manual selection of bunches and berries. We begin fermentation immediately in concrete eggs with selected yeasts to prevent oxidation. Alcoholic and malolactic fermentation takes place over 25 days, with very gentle pumping over during the first week. Once fermentation is complete, racking and pressing begin, always prioritizing freshness and fruit over extraction. No wood aging or sulfur.
