After two hot seasons marked by a lack of rainfall and a worrying water deficit, the 2020-2021 season finally brought us a cool and wet one. Summer began with very pleasant temperatures, allowing the grapes to grow and develop under optimal conditions. However, the weather presented us with new challenges, gifting us with rain at the end of January 2021. It was the most intense rainfall recorded in the last 70 years (80 mm), making the summer of 2021 the coolest of the decade. Harvest dates were delayed by 15 to 20 days compared to the previous year and were much closer to the norm for cooler vintages.
Most of the grapes are chilled in a cold room with slight crushing under these chilled conditions. Skin maceration lasts for 35 days. Fermentation takes place in vats with regular pumping.
