Encomiendas trained by the Alberello Plugiese and Cordone speronato systems in depth, dryness of calcareous siliceous clay soil; the average yield is 75 quintals of grapes per hectare.
The grapes are harvested very early in the morning and immediately transported to the winery to be crushed. Vinification then takes place in stainless steel tanks, with 10 days of maceration and frequent pump-overs. Once malolactic fermentation is complete, part of the wine matures for 6 months in French oak barrels of varying toasting levels, while the rest remains in the stainless steel tanks.
