Les Fumées Blanches (literally, 'white smoke') takes its name from the morning mist that covers the Sauvignon Blanc vines, located at the foot of the Black Mountain, between the Atlantic and the Pyrenees.
The grapes are pressed, and the must undergoes active maceration for 5 days at a temperature between 5°C and 8°C. This process allows for the release and preservation of aromatic precursors found in the grape skins. When in contact with indigenous yeasts, these precursors later reveal the characteristic aromas of Sauvignon Blanc.
Pale yellow color with green highlights.
Dominance of citrus aromas typical of Sauvignon Blanc, with notes of lemon, lime, and exotic fruits (pineapple).
Mineral notes (chalky and smoky). The palate is elegant, lively, and well-balanced in its freshness. Good length with a citrus touch and a mineral finish.
