Stony, medium-textured morainic soil with gravel. The cool, breezy climate of the old vineyards ensures a balanced production of sound, ripe grapes with a yield of 12,000 kg per hectare.
The grapes are painstakingly crushed and then fermented at a very low temperature after brief maceration on the skins. Once the colour is deep enough, a small percentage of clear first-pressing must is extracted, which is then fermented very slowly at a controlled temperature with cultured yeasts.
