The Syrah expresses itself from the volcanic formations (basalt) and contributes spicy notes to the wine. Planted in clay-limestone soils, the Monastrell lends structure to the blend, while the Garnacha and Cariñena bring out the best in the lean Kimmeridgian soils, offering acidity and minerality.
To guarantee the quality of our grapes, we harvest Syrah and Grenache before they are fully ripe. Fermentation begins at 22°C with daily pump-overs. All vats are tasted before and after each pump-over. Finally, we practice co-fermentation in a "mille-feuille" style, alternating between destemmed grapes and whole bunches of three to four different grape varieties. This technique adds complexity.
