The grapes are hand-harvested and transported to the winery in 450kg plastic bins. The bins are unloaded directly onto conveyor belts, where the bunches are sorted before being carefully destemmed and lightly crushed. They are then transferred to the fermentation tanks.

The result is a wine with great aromatic power and a palate with vibrant acidity and nerve, balanced with the volume and creaminess provided by the brief stay in its fine lees.
