Sauvignon Blanc is a white grape variety originating in France (Loire Valley and Bordeaux). It adapts particularly well to cool climates and oceanic influences. Sauvignon Blanc is highly valued for its freshness and remarkable aromatic intensity.
Mechanical harvesting (between 4:00 and 9:00 a.m.) to take advantage of cooler temperatures and limit oxidation. Skin maceration (8-12 hours) and/or cold stabilization at 8-10°C for a few days – Pneumatic pressing. Fermentation between 16-18°C with selected yeasts that reveal all the typicity of Sauvignon Blanc. Aging on fine lees for several months before blending. The wine is protected from oxygen throughout the entire process.
Pale, bright yellow layer with some green highlights.
