Vineyards of Fugnano and Montemura; Solatio del Tani, vineyards of Sberla and Madura di Lapi in the locality of San Lorenzo di Gaggiano. The vines are trained by the single and double Guyot systems on the hills at 300 meters altitude, in medium density soil of tuff and limestone; the production of grapes is 90 quintals per hectare, with a yield of 70% wine.
The grapes are harvested in October at the optimal ripeness and vinified using the red wine method, with 10 days of maceration and frequent pump-overs. Fermentation, with selected yeasts, takes place at a controlled temperature (28-30°C). The wine is then aged for six months in stainless steel tanks, followed by a suitable period of bottle aging before release.
