Hand-selected bunches and berries. Fermentation begins immediately in concrete eggs with selected yeasts to prevent oxidation. Alcoholic and malolactic fermentation takes place over 25 days, with very gentle pump-overs during the first week. Once fermentation is complete, the wine is racked and pressed, always prioritizing freshness and fruit character over extraction.
