Sicily is a province where selected plots are cultivated at an altitude of between 400 and 500 m above sea level and treated by the Guyot system on clay soil with limited grape yields per hectare.
The grapes are harvested in mid-September, and the wine is made separately using the red wine method in small stainless steel tanks. Long maceration and controlled temperatures help give the wine a good structure.
