Selected plots in the splendid hills of Castellina, on the Siena side of the classical zone, at an altitude of 300-400 meters; the vines are trained by the spalliera system (Guyot and speronato cordone) on well-exposed land of a very varied nature (limestone, marl, clay, Pliocene conglomerates, alluvial materials) and with restricted yields per hectare.
The grapes, hand-picked after the first week of October, are vinified using the red wine method, with 15 days of maceration and frequent pump-overs. After fermentation at a controlled temperature (25°C), aging for one year in French oak barrels provides balance and smoothness.
