We often forget that the South of France produces some of the country's finest white wines. The proximity of the Hérault region lends freshness to our wines, while the altitude contributes to a vibrant acidity. This perfect correlation between favorable sun exposure and clay-limestone soils planted with Viognier and Roussanne yields wines with spicy aromas and a delicate mineral structure.
The grapes are harvested at night and quickly taken to the winery for pressing. The must remains at 8°C for at least five days before settling and fermentation. The Roussanne is fermented in new oak barrels, and the Rolle and Viognier in stainless steel tanks. At the end of fermentation, the wines are racked and aged on their lees.
