The Sauvignon Blanc is from Gualtallary, the Semillon is from Tupungato and the Tockaij is from Chacayes.
All grapes are harvested in mid-February. Despite their different ripening periods, the different altitudes at which these varieties grow allow them to ripen during the same week. However, they ferment separately but with their skins (skin contact). The wine remains in contact with its skins for over a month, in sealed and refilled barrels, without contact with air to preserve and concentrate the fresh expression of its fruit. Then, racking takes place, and the grape skins are pressed. The wine is barrel-aged for four months with regular battonages, and is then filled without filtering or adding sulfites.
